  • 2 onions chopped
  • 1 tablespoon garlic chopped
  • 1/2 cup bourbon
  • 2 cups dark brown sugar
  • 1 pound thick cut bacon
  • 2 pounds dried great northern beans
  • 2 pounds dried pinto beans
  • 1 pound diced ham
  • 4-5 roasted hatch peppers
  • 1-2 cups ketchup
  • 1/3 cup mustard
  • 1 cups liquid smoke

Soak the beans overnight. In large pot cook bacon and pork sausage. Once these are done, add diced ham. Cook until ham is hot then add onions and peppers and saute. Leave grease in pan and add beans and enough water to cover beans by 1". Bring to boil and cook for 30 minutes at rolling boil uncovered. Turn down heat to bring to simmer. Add ketchup, mustard bourbon, liquid smoke, and brown sugar and stir well. Add spices to taste.
