  • 1/2 cup sour cream
  • 1 teaspoon kosher salt
  • 1/2 cup parmesan cheese grated
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon freshly ground pepper
  • 1 clove garlic smashed
  • zest of one large lemon
  • 1/2 cup duke's mayonnaise
  • 1/2 small white onion roughly chopped
  • 1 10 ounce package frozen chopped spinach thawed and water squeezed out

1. Process the onion, garlic and lemon zest in a food processor fitted with a metal blade until finely minced. 2. Add the spinach and pulse several times until finely chopped. 3. Add the rest of the ingredients and process until well mixed but before becoming smooth. Taste and adjust seasoning. 4. Transfer to a serving bowl and present with pita, tortilla or bagel chips or crudite.
