Day Before Mashed Potatoes

Day Before Mashed Potatoes
Day Before Mashed Potatoes
I found this recipe on another site and did a couple changes to it for my personal preference but I love this recipe and the fact that you can make it and throw it in the crookpot on warm and leave it sit until you are ready to serve dinner. Saves a lot of time during the holidays.

Directions 1.Bring a large pot of salted water to a boil. Drop in potatoes, and cook until tender but still firm, about 15 minutes. 2.Transfer potatoes to a large bowl, and mash until smooth. Mix in the cream cheese, sour cream, garlic powder, salt, pepper and butter. Cover, and refrigerate 8 hours, or overnight. 3.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish. 4.Spread potato mixture into the prepared baking dish, and bake in the preheated oven about 30 minutes. *Optional: Instead of steps 3 and 4 in recipe, after preparation put in crockpot on warm and let sit until ready to serve. I also put about 1/4 cup cubed butter on top of potatoes while in the crockpot.
