Tim and I had these appetizers in a hotel bar in Merrillville, IN. We were there with John and Kelly Nagy for a TBIRD wedding, and these were SO GOOD! When we got home, I tried to make my own variation, and here it is!

  • 2 tablespoons red wine vinegar
  • 3/4 cup thousand island dressing
  • 1/4 cup dijon mustard
  • filling ingredients
  • 1/4 cup onion minced
  • sauce ingredients
  • 1 teaspoon onion minced
  • worcestershire sauce dash
  • hot pepper sauce dash
  • 12 ounces shredded / ground corned beef
  • 9 ounces swiss cheese shredded
  • 3/4 cup sauerkraut rinsed and drained
  • 12 eggroll wrappers

Make dipping sauce and set aside. Combine filling and mix well. Place about 2 tablespoons of filling in center of each wrapper. Roll as directed on package, sealing edges with water. Deep fry in oil at 350? for 3-4 minutes. Drain on paper towel and serve with sauce.
