I made this one up, in an attempt to replicate a soup from our local Indian restaurant

  • 1/2 tsp salt
  • 1 medium onion chopped
  • 1 cup chicken stock
  • 1/2 tsp fresh ginger minced
  • 1/2 tsp dried chillies
  • 1/2 tsp dried corriander
  • 1 tsp dried cumin
  • 1 28oz can chopped tomatoes
  • 1/3 cup creamed coconut from can

Soften onion in some oil for a couple of minutes. Add ginger and spices and continue to cook for another minute. Add remaining ingredients and simmer for 15 mins. Puree to desired consistency.
