I did this for my New Year food requirement - beans, greens, pork. Used ham left over from Thanksgiving 2015.

  • 2 tablespoons cooking oil
  • 2 cups cooked ham chopped
  • 2 medium bay leaves
  • 1 pound black-eyed peas soaked overnight
  • 1/2 pound mustard greens collards really, trimmed and chopped
  • 2 medium onions 2 diced, 2 chunked
  • 2 quart chicken stock homemade
  • 1 med ham bone 1/2 of half ham bone

on new years eve morning, place homemade chicken bone broth in crock pot. add ham bone, onions chopped in 4 pieces, bay leaves cook on high until very hot, shift to low (mine does this automatically) sort peas and place in 2 quarts water, place in fridge - at least that's what I do cooking water should be ready after 24 hours or more as needed - depending on whether you have a hang over and need to sleep in strain the cooking liquid and discard solids in a Dutch oven, add cooking oil - I use Kirkland Mediterranean blend (olive, grapeseed and cold pressed canola) over medium heat, soften the onion for a few minutes, then add garlic for 1 minute add broth, strained peas, chopped collards bring to boil, then simmer heavily - medium low add chopped ham and cook another hour or til peas and greens are at desired consistency. you may want to go way shorter on the cook. I also made cornmeal drop biscuits to go with.
