I do lots of different veg soups with what ever is to hand, this one was especially nice. They are very healthy as just vegetables, herds, spices and water. I need to investigate a little more about adding richness with flour or cream but they taste pretty good and low on calories.

  • iceberg lettuce
  • 1 handful fresh coriander
  • 2-4 pints water to fill large bowl
  • ample salt and peper
  • 1 green or red chilli
  • 1 pack carrot and swede
  • 1 carrots
  • 2 medium sweet potateo
  • 1 medium baking potato
  • 1 tsp garam masala powder
  • veg stock cube
  • 2 medium onions
  • 1 desert spoon garlic

Fry onion, then garlic and chille add carrot pack, stir then add hot water and stock cube. Season and add Garam Masala. After 5 mins add sweet potato and baking potato after 5 mins add leek pack, add more water if necessary after 5 mins add lettuce - I tried this as it was hanging around and about to be thrown out - seemed to work well.
