Inspired by La Madeleine's Tomato Basil Bisque, this is a very easy, very cheap, AND very healthy version, with no butter or cream using only one pot!

  • 2 tablespoons salt
  • 1/8 teaspoon ground cayenne pepper
  • 3 tablespoons dried basil
  • *all spice measurements are approximate
  • 2 (28oz) cans crushed tomatoes large cans, generic is better
  • 1000 ml tomato juice i use v8 blend for extra vitamins
  • 3 cups 2% milk add more as needed
  • 1/2 teaspoon ground or cracked black pepper
  • 1 dash fresh lemon juice lime is ok

Combine all ingredients in a large pot, stir, and bring to low boil. Cover loosely, and simmer on high, stirring occasionally for about 30 min Uncover, continue simmering, but stirring constantly, until soup reaches desired consistency and flavor intensity. Soup will likely need a bit more basil, but feel free to season to taste.
