  • 1 cup heavy cream
  • 2 quarts chicken broth
  • 1 lbs leeks sliced, white parts only (5 leeks)
  • 3 3/4 lbs potato sliced (6 to 8 potatoes)

Melt butter in a soup pot. Saute leeks and potatoes until soft and transparent. Add chicken broth and bring to boil. Simmer, covered for about 30 min. Puree in a blender when cool enough. Rewarm and add cream before serving.
