A simple granola recipe given to me by my good friend when we were only 8 or 9 years old. I'm 27 now and have been making it ever since for me and my own children! Mom's favorite, kids' favorite! I always omit the raisins - I feel it makes the recipe too sweet.

  • 1/2 cup water
  • 1 cup honey
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons salt
  • 1 cup canola oil
  • 2 teaspoons almond extract
  • 2 cups whole-wheat flour
  • 2/3 cup walnuts chopped
  • 6 cups rolled oats
  • 1 cup wheat germ
  • 1 cup coconut
  • 2/3 cup golden raisins (opt.)

Combine first four ingredients in a large mixing bowl (flour, oats, wheat germ, coconut). Then blend together separately all the rest of the ingredients except the walnuts/raisins. Add the blended liquids to the dry ingredients and mix well. Add the walnuts and/or raisins and mix in. Spread finished product out on 2 greased cookie sheets and bake 1 hr at 250 degrees F or until dry and golden. Store in covered containers. Makes 2 1/2 to 3 quarts at 1 cup per serving (less for children). Very filling! Lasts a long time if kept in a cool, dry place.
