  • 1/3 cup miracle whip
  • 1/4 cup scallions sliced
  • 1 13 3/4 ounce can chicken broth
  • 1 6 ounce package long-grain and wild riice mix
  • 1 11 ounce can mandarin oranges drained
  • 1 8 ounce can sliced water chestnuts drained

Reserve 2 tablespoons broth. Add enough water to remaining broth to substitute for water in rice package directions. Cook rice according to directions omitting butter or margarine; cool. Stir in oranges, water chestnuts and scallions. Blend reserved broth and Miracle Whip; stir into rice mixture. Cover and refrigerate 2 to 3 hours. Serve on lettuce leaves.
