This gluten free recipe was created to be served with my hot red chili. I put a waffle on the plate, then pour the chili over the top. The sweet of the cornmeal waffle is a good contrast to the spicy chili. This was such a great hit at a local chili cookoff, that I was asked to serve this during a fall Church event. The Community LOVED it!

  • 2 cups milk
  • 1 teaspoon sugar
  • 3 teaspoons vegetable oil
  • 1 3/4 cups gluten free flour
  • 1 teaspoon xanthum gum
  • 1 3/4 cups yellow cornmeal

In a large bowl, combine flour, xanthum gum, cornmeal, baking powder, sugar, and salt. Add milk, oil, and eggs. Stir until smooth. Preheat a waffle iron to the manufacturers specifications. Lightly spray the iron with cooking spray when heated. Pour the batter into the hot iron. Cook in batches.
