  • 1 cup sour cream
  • 2 lb frozen diced potatoes thawed
  • 1/4 cup fresh onion chopped
  • 10.75 oz can cream of whatever you like best soup broccoli cheddar, chicken, mushroom, creamy onion.... etc....
  • 1 cup shredded sharp cheddar cheese white or yellow
  • 1 cup corn flakes crushed to sprinkle over top (i like to use durkee fried onions instead. nice flavor and crunch too

Preheat oven to 350. Lightly spray 13x9x2 inch baking dish with cooking spray. In large bowl, combine all the ingredients except corn flakes. Stir until thoroughly combined. Pour into prepared dish and spread evenly. Sprinkle the corn flakes over top and bake one hour until potatoes are cooked though and bubbly. Slice into 8 servings. *If using durkee fried onions in place of the corn flakes, put 1/2 cup into the potatoes, and the last 15 minutes of baking time, remove casserole and sprinkle with the fried onions, and return to oven for 15 additional minutes.
