Nothing says fall/winter foods to me like baked potato soup. I love the rich flavors to the dinner table and it is a super quick one I can make in less than 30 minutes.

  • 2 tbsp butter
  • 1 cup heavy cream
  • 2 tbsp flour
  • 1 garlic cloves minced
  • 6-8 med/large red potatoes chopped into cubes
  • 2-3 green onions thinly sliced
  • 2 14.6 oz cans vegetable stock
  • 1 14.5 oz can chicken stock
  • 1/8 tsp 21 seasoning salute (trader joes)
  • 6-8 grinds everyday seasoning trader joes
  • 1/4 cup real bacon bits

*The seasoning from Trader Joe's consist of the following, just in case you don't have one near you: 21 Salute- onion,black pepper, celery seed, cayenne pepper, parsley, basil, marjoram, bay leaf, oregano, thyme, savory, rosemary, cumin, mustard, coriander, garlic, carrot, orange peel, tomato granules, lemon juice powder, oil of lemon, citric acid Everyday Seasoning- Sea Salt, mustard seeds, black peppercorns, coriander, onion, garlic, paprika, chili powder. Place 1/2 of butter (1 tbsp) into a pot and melt on med/low heat. Place in potatoes that have been chopped into cubes and cover. Stirring occasionally to only lightly brown the potatoes. Remove 1/2 of the potatoes and place in a bowl. Mash the remaining half of the potatoes or use a immersion blender with one can of stock (doesn't matter which one). Remove and place in a bowl and set aside. Place remaining butter in pot and melt. PLace in butter and slightly brown. Add all of the heavy cream. Add remaining cans of stock. PLace potatoes back in the pot and stir to combine. Add green onion and bacon.
