1. If you want to make the chili all together in one skillet/pot, heat oil in large skillet or stock pot on medium-high heat. Add chicken and onion; cook and stir until chicken is no longer pink. 2. Alternatively, you can grill the chicken breasts separately on grill or grill pan and then cut into small pieces and add it to the beans and seasonings in a skillet or stock pot. 3. Stir in spices and remaining ingredients until well blended. Bring to boil. 4. Reduce heat to low; simmer 10 to 15 minutes, stirring frequently. 5. Serve with assorted toppings and/or over white or brown rice, if desired.
