Cover rinsed, sorted beans with water in Crockpot. Add package Chilo-O mix and pepper. Cook on low overnight. The following morning add 1/2 lb. uncooked Owens breakfast sausage (the kind that comes in a plastic tube) and 1/4 cup sugar. Stir occasionally. Cook on high about 4 hours longer.
