  • 1 cup splenda
  • 3/4 cup sugar free maple syrup
  • 5 teaspoons cinnamon
  • 1/4 cup and 2 t. of f/f spray butter
  • 1/4 cup crushed nuts (any kind you want, i used almonds)

Preheat oven to 350 degrees Peel and cut potatoes into small chunks. Place potatoes into boiling water, cook until tender enough to mash. Drain potatoes from water, place in lg. bowl with 3/4 cup of Splenda, 1/2 cup of s/f maple syrup, 4 tsp of cinnamon, 1/4 cup of f/f spray butter. Mix all ingredients well with electric mixer. When all mixed together spread mixture into baking dish (8" x 8" pan). Topping: Mix crushed nuts, 1/4 cup of Splenda, 1/4 cup of s/f maple syrup, 1 tsp of cinnamon, and 2 T. of f/f spray butter together and spread evenly on top of potato mixture. (You can leave the nuts out if you like.) Place in oven for about 30 minutes.
