Granola recipe I modified from my mother-in-law's friend. I usually double this batch and it lasts us about a month.

  • 1 tablespoon vanilla
  • 1 cup sunflower seeds
  • 3/4 cup coconut oil
  • 6 cups oats
  • 1 cup nuts (walnuts) chopped
  • 1.5 cups unsweetened coconut
  • 3/4 cup grade b maple syrup (or honey)

Heat oven to 350 degrees. Combine oil, maple syrup and vanilla in a small bowl, warm and blend. Combine all dry ingredients into large baking pan or roaster and stir. Pour wet mixture over the dry mixture and stir well until combined. Bake at 350 degrees until light brown, stirring often. (Let bake for about 15 mins and then stir every 5-8 minutes for the rest of the hour or so.) While warm you can add dates or raisins after baking, but I never do as my husband doesn't like them.
