  • 1 slice lemon peeled seeded (1/4 inch slice)
  • 1 (10-ounce) package of frozen spinach thawed, drained
  • 1 garlic clove peeled (i used two!)
  • 1/2 cup artichokes canned and drained or frozen and thawed

1.Preheat oven to 350ËšF 2.Place all ingredients, except artichoke hearts, into the Vitamix container in the order listed and secure lid. 3.Select Variable 1. 4.Turn machine on and slowly increase speed to Variable 4. 5.Blend for 15 seconds. Remove the lid plug. 6.Add artichokes through the lid plug opening. 7.Blend for an additional 5 seconds. 8.Pour into an oven-safe dish and bake uncovered for 20-25 minutes or until bubbly. Serve with crackers, pita bread, veggies, or tortilla chips. Jen's notes: used 1 can of whole artichoke hearts in water, non-fat sour cream, generous 1/2 cup of shredded Parmesan in dip and then on top prior to baking. Used a smaller than average baking dish (10 1/2 x 7) to bake. Served with French bread cut into cubes, carrot sticks and celery. Also blended a bit longer than recipe directions (about 10-20 seconds longer) and needed the Vitamix tool to push all ingredients down
