I make bread for my family using a bread machine. I don't like large loafs because it does not make for good sandwich bread for the children to take for lunches. Therefore this is a recipe for a 1 pound loaf, but I'm sure it could be expanded. I spent some time tweaking this recipe to make it moist and last for a few days.

  • 3 tablespoons extra virgin olive oil
  • 2 cups bread flour
  • 1 tablespoons sugar
  • 3/4 cup water warm
  • 3/4 teaspoon salt himalayan
  • 1/3 cup rice cooked; or substitute potato flakes
  • 1 teaspoon yeast active dry yeast

The water can be heated in the microwave for 45 seconds. If substituting potato flakes instead of cooked rice, add another 1/8 cup of water. Add all ingredients to the bread pan in the order listed. For the yeast, create a small, finger sized bowl in the top of the flour then pour the yeast in the finger sized bowl to prevent the yeast from touching the wet ingredients until your bread machine starts. Place the bread pan in your bread machine and use a French Bread setting or Basic White Bread setting. Makes a 1 pound loaf.
