  • 4 cups cheddar cheese
  • 1 cup carrots shredded
  • 2 quarts chicken broth
  • 2 12 oz bottles low carb beer i used bud light

Heat oil in skillet, over medium heat until hot. Add all vegetables and sauté until tender. Transfer to crock-pot. Add all but the cheese and place lid on Crockpot. Cook on low for 6 hours. Add cheese and stir until melted. Serve immediately. I plan to add ham next time and will add it at the very beginning.
