  • 2 tablespoon butter
  • 1 10-oz package couscous i prefer near east brand
  • 1 whole spring onion chopped
  • 1/2 cup golden raisins fresh and plump
  • 1 whole cinnamon stick
  • 2 tablespoon fresh parsley chopped

Bring chicken broth to a boil in a coverable saucepan. Add couscous, butter and cinnamon stick. Stir. Immediately turn off heat and cover tightly. Let stand for 5 minutes. Remove cover and stir in raisins and spring onion. Add parsley, add more butter and salt and pepper as desired; serve immediately. NOTE: Couscous cools rapidly, due to the large surface area. Prepare this dish only at the last minute -- takes only 10 minutes maximum, start to finish. Or, pre-warm a serving dish.
