  • 2 teaspoons ground cumin
  • 3 cups beef broth
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 29 ounces tomato sauce
  • 1.25 pounds ground beef
  • 1 pound beef top sirloin steak cut into 1-1/2 inch cubes
  • 2 pounds pork sirloin roast cut into 1 inch cubes
  • 1 small onion about 3/4 cup, chopped
  • 2 tablespoons clarified butter
  • 29 ounces fire-roasted crushed tomatoes i prefer muir glen prganic
  • 16 ounces medium picante sauce i prefer pace original
  • 4 ounces diced green chiles fire-roasted, jarred or canned. i prefer mezzetti
  • 4 tablespoons chili powder i prefer mccormick
  • 1 teaspoon creole seasoning i prefer cajun's choice, or substitute 1/4 teaspoon salt, 1/4 teaspoon white pepper, and 1/4 teaspoon ground black pepper
  • 1/2 teaspoon black pepper fresh coarse ground

1. In a stock pot or 6 quart Dutch oven cook onions in clarified butter until translucent. 2. Brown ground beef with onions 3. In a separate skillet brown top sirloin and add to ground beef mixture. 4. In the skillet just used for top sirloin add pork and sprinkle with garlic powder. Brown and add to meat mixture. 5. Add remaining ingredients except salt to pot and stir thoroughly to combine. Add salt to taste. 6. Bring chili to boil then reduce heat and simmer over low heat for 45 minutes or cook in a 6 quart crockpot for 4 to 6 hours on low.
