  • 4 teaspoon baking powder
  • 1/4 cup sugar
  • 2 eggs separated
  • 4 tablespoons butter melted (about 1/4 cup)
  • 1/4 cup canola oil (or enough to bring liquid to 1/2 cups)
  • 1 teaspoon vanilla (do not add if use almond milk)
  • 2 cups milk (i used almond milk b/c i did not have regular milk)

Heat waffle iron. Turn oven on to warm or 200. Sift dry ingredients together in a large bowl. Separate eggs, placing egg white in a small bowl. Beat egg whites until stiff and set aside. Lightly beat egg yolks and add milk, butter, oil and vanilla. Stir until combined. Add to dry ingredients and mix well. Gently fold in egg white until egg white combined. Spray waffle iron with cooking spray. If using Belgian waffle maker add 11/2 to 2 cups batter for two waffles. Let cook 3 minutes until golden brown. Either eat immediately or place waffle in oven on cooling rack set inside a cookie sheet to stay warm.
