This is a simple recipe that I use homemade Irish Bacon (see recipe) and Asiago cheese.

  • 8 slices bread toasted choose your type, i use white
  • 1 cup asiago cheese shreaded
  • whole grain mustard just enough to add flavor (or your favorite kind)

Preheat oven to 400 degrees. Slice the Irish Bacon very thin, a slicer is best for this job. If you can't get Irish bacon, use Canadian bought from the store and sliced. Shred cheese if not already. Toast bread lightly, cut off crust and cut into 3 pieces per slice. Gather all the ingredients. I then smash the bread down to make it thinner. Add mustard to each piece (to taste), fold the bacon so it will fit on the piece of bread. Place on a cookie sheet, I cover with foil for easy clean up. Sprinkle as much cheese onto the bacon as will stay on, you may have to manipulate the bacon some. If a little falls off, its ok, that will melt/crisp up and is also good to. Place in oven and bake for a bout 5 minutes or until cheese has melted/crisp up. You can also use a torch to brown the cheese a little. Plate and serve.
