Something I discovered when I really wanted pancakes and don't have any eggs. Light and fluffy, way softer than normal pancakes, and perfectly crispy on the outside.

  • 1 part any flavoured ice cream (i used pralines & cream) melted
  • 1 part buttermilk pancake mix
  • water until desired consistency

Simply melt ice cream by mixing it, add pancake mix and whisk until fully blended. Add water at this point if the mixture is too thick. Let sit for a minute while you warm up a greased pan. You know the pan is ready when the water "dances" on it. Pour batter on to pan, I added frozen blueberries at this point. You can add any fruit you like or leave it plain. Flip once edges start to bubble, cook on other side. Serve with butter, syrup, blueberry sauce, whatever suits your mood, I pretty much ate mine right out of the pan. Delicious.
