Having recently moved to the Pacific Northwest from the East, I find new foods to cook with all the time. This time I found these beautiful Orca Beans in my local supermarket, so I decided to make some chili!

  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 3 cloves garlic finely minced
  • 1 pound ground turkey
  • 1 medium onion finely diced
  • 1 medium carrot finely diced
  • 11 ounces orca beans dried, not soaked
  • 14.5 ounces petite-diced tomatoes
  • 1 medium pepper diced (i used an orange pepper for color)
  • 1 teaspoon oregano i used mexican oregano

Put the dried Orca Beans in a large pot and cover with water by about 1 inch. Bring to a boil and then lower heat to a simmer. Cover and simmer for about 1.5 hours. In a large pan, heat the olive oil. Add the diced onions and saute until translucent. Add the garlic and spices (cumin, chili, oregano, salt) to the onion and saute a couple minutes. Remove from heat and set aside. Using the same pan, add the ground turkey. Try to cook it so that it browns on the bottom. Once turkey browns a bit, add the onion mixture and combine. Add the diced tomatoes and the chicken broth to the pot with the beans. Add the turkey mixture to the pot with the beans. Combine and simmer until flavors come together and beans soften, about another hour or so.
