Cover the bottom of stock pot with blended oil, add the bacon, then turn on flame to medium. Cook bacon until bacon fat renders out and the bacon begins to get crispy. Add the onions, garlic, and salt. Sweat until the onions are soft. Add the tomato strips, chicken stock and heavy cream and bring to a simmer. Add in the goat cheese, parmesen and the thyme. Blend with the immersion blender. Simmer for 30 minutes more. Finish by blending in the vita-mix blender.
