  • 4 cloves garlic chopped

  • 2 tablespoons canned chipotle chiles in adobo sauce
  • 3 pounds stew meat browned
  • 3 14.5 cans diced tomatoes in juice
  • 1 12 oz beer
  • 3 14.5 cans pinto beans or homemade rinsed & drained

In a Dutch oven or large heavy pot, heat oil over med-high. Add onions and garlic. Season with salt and pepper and cook, stirring occasionally until softened. 3-5 mins. Add tomato paste, chili powder, chipotles, and cinnamon. Cook, stirring until mixture has begun to brown, 2-3 mins. Add beef and cook, breaking it up with a spoon until no longer pink, about 5 mins. Add tomatoes with their juice, beer and beans. At this point, either 1) bring to a boil and reduce to a rapid simmer. Cook over medium heat until chili has thickened slightly and beans are tender, about 5 mins. Sprinkle with cheese, OR 2) put all in crockpot and heat on high for 8 hrs.
