1. Brown the sausage and drain half of the drippings. 2. Coat interior of slow cooker with cooking spray. Place sausage and drippings in slow cooker. 3. Stir spinach into slow cooker. 4. Stir 1/3 cup Parmesan cheese into the spinach. 5. Break the eggs, one at a time, into a cup or small ramekin, then gently pour each onto the spinach mixture, keeping the yolks intact. DO NOT STIR 6. Cover and cook on high 1 1/2 hours or on low up to 8 hours (can prepare and turn it on the night before). 7. Sprinkle with pepper and 2 TBSP Parmesan cheese before serving.
