  • 2 cups orange juice
  • 1 dash nutmeg
  • 1 teaspoon orange zest grated
  • 8 large carrots
  • 1 cup prunes
  • 1/2 teaspoon fresh ginger root grated
  • 2 handfuls raisins

Wash, peel and slice carrots into medallions. Place carrots and prunes in a pot. Cover with orange juice. Bring the mixture to a boil; let boil for 10 minutes. Stir in sugar and butter. Simmer gently for 1 hour or until the liquid is almost absorbed. Add the orange zest, nutmeg, raisins and ginger and let simmer another 5 minutes.
