So unbelievably delicious! I've adapted this from a dish I had at Baker Street Cafe in Ottawa, ON. I would encourage you to try different combinations of cheese. The ones that I've included are just what I use... I would like to try Asiago with this dish at some point.

  • 1 cup ham chunks
  • 2 plum tomatoes diced small
  • 2 tablespoons cottage cheese
  • 1/2 cup swiss cheese gradted

** Quantities are estimated ** Cook ham in a pan to taste Mix Egg, Plum Tomatoes, Pesto and cheese in a bowl Poor Egg mixture into pan and cook on Low-To-Medium heat and stir often to keep soft. Add salt and pepper to taste.
