  • 1/4 cup all-purpose flour

  • 2 tbsp fresh lime juice
  • 3-4 tbsp vegetable oil

  • 1 cup frozen corn kernels thawed
  • 2-3 pounds boneless beef stew meat
  • 2 tbsp tomtao paste
  • 4 cups low-sodium beef broth additional broth can be added if it cooks too thick
  • 1 can diced tomatoes in juice (14.5 oz)
  • 1 large onion diced (2 cups)
  • 2 tbsp minced fresh garlic
  • 1 tbsp each chili powder, dried oregano, and ground cumin ( i like ancho chili powder)
  • 2 lb sweet potatoes peeled and cubed (about 4 cups)
  • 2 anaheim chiles charred, peeled, seeded, and diced

Season beef pcs with salt and pepper.Toss beef with flour to coat. Brown beef in 3-4 batches in 1 Tbsp. oil per batch in a large pot over medium heat. Add tomato paste to pot and cook medium heat, broth, Add onion, garlic, chili powder, oregano, cumin, and coriander. Add tomatos and liquid. Add corn and cook at low simmer until meat is tender about 1 1/2 hours. While beef is cooking, char peppers and peel, throw seeds away. chop peppers, place in bowl, set aside. Add sweet potatoes, cover, and cook until fork-tender, 1 hour. ( test with fork at 30 min), Stir in chiles,cilantro, and lime juice.
