  • 1/3 cup cake flour (all-purpose flour in the us)
  • flavorless coconut oil for frying
  • icing sugar (powdered sugar) for dusting
  • mash the bananas thoroughly. (don't worry if there add the eggs, and mix until combined.
  • finally add the baking powder flour and nutmeg. stir to combine. the mixture should resemble a loose pancake batter. if you need more flour, you can add some, a spoonful at a time, until the consistency feels right. set the batter aside.
  • heat the coconut oil to a depth of 7.5 cm (3 inche or when a teaspoonful of batter browns quickly and rises to the top, you are ready to fry.
  • use a soup spoon to drop the batter gently into th being careful not to crowd the pan. i like to fry about 4 fritters at a time. when the fritters are golden brown on one side, turn them over and allow the other side to cook.
  • when the second side is golden brown remove the fritters from the oil. dust them generously with icing sugar and serve immediately!
