2 eggs
1/2 teaspoon baking powder
1 teaspoon ground nutmeg
6 overripe bananas peeled and mashed 2 eggs 1/2 te for frying icing sugar (powdered sugar), for dusting

1/3 cup cake flour (all-purpose flour in the us)
flavorless coconut oil for frying
icing sugar (powdered sugar) for dusting
mash the bananas thoroughly. (don't worry if there add the eggs, and mix until combined.
finally add the baking powder flour and nutmeg. stir to combine. the mixture should resemble a loose pancake batter. if you need more flour, you can add some, a spoonful at a time, until the consistency feels right. set the batter aside.
heat the coconut oil to a depth of 7.5 cm (3 inche or when a teaspoonful of batter browns quickly and rises to the top, you are ready to fry.
use a soup spoon to drop the batter gently into th being careful not to crowd the pan. i like to fry about 4 fritters at a time. when the fritters are golden brown on one side, turn them over and allow the other side to cook.
when the second side is golden brown remove the fritters from the oil. dust them generously with icing sugar and serve immediately!
