I have a lot of variations of this so as I make them, I am just going to record them by number. This is what I have when I make lamb burgers for my family because I love yogurt sauce on the side of it. These are great when served with bread like Naan or pita bread. They have a nice mellow flavor...lots of comforting spice, no heat.

  • 1 teaspoon cinnamon
  • 1 tbsp olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 tomatoes chopped
  • 1 can (12 oz) chickpeas drained and well rinsed
  • 1/2 sweet onion chopped

Heat olive oil in saute pan over medium heat. Add chickpeas and onions and cook for 2 to 3 minutes. Add all seasonings/spices and tomatoes and cook for 2 to 3 minutes more. You are finished when the tomatoes are the consistency you like them...either firm or soft or mush. Whatever you like. Chick peas should be heated throughout.
