Very hearty and warm. It tastes like chicken parmesan in a bowl. I have had a lot of fun with this recipe adding whatever vegetables were in season (squash, potatoes, cauliflower, broccoli, etc).

  • 1/2 head garlic peeled cloves
  • 8 leaves sage chopped
  • 2 sprig rosemary chopped
  • 2 sprig thyme chopped
  • 1/2 bunch parsley chopped
  • 1 pound ground sausage/turkey
  • 2 celery
  • 28 ounces tomatoes crushed
  • 3rd bowl (large)
  • 1 pound rigatoni/orzo/alphabet pasta cooked; 500g

In a large soup pot, warm stock and garlic cloves. Before adding the vegetables, remove the garlic cloves and bay leaf. In a large saucepan, warm the oil and herbs. Cook ground turkey/sausage until brown. In a food processor, chop carrots, celery, and onion and add to saucepan until softened. Add tomatoes and transfer to soup pot. Add pasta. Season with salt & pepper to taste. Simmer for 15 minutes. Add a sprinkle of parmesan to each bowl.
