When I was in my 20's I worked with a woman who brought a casserole of okra, tomato and corn on party days. I loved it. I put this together on the style of fried corn and since my kids HATE okra, but just don't like lima beans, I used them instead. I used more like a tablespoon of sugar when my corn was not so sweet. And I like to use the microwave and paper plates to cook bacon

  • 1 teaspoon sugar
  • 1 medium green pepper -- diced
  • 1 medium onion -- minced
  • 6 ears corn
  • 1/4 pound bacon
  • black pepper -- freshly ground
  • 1 package baby lima beans -- frozen or fresh
  • 6 medium plum tomatoes -- chopped

Cut corn off cob and scrape cob for milk. Set aside. Cook bacon and crumble. Add 3 tablespoons of bacon drippings to a skillet. Saute onion and green pepper lightly and add lima beans then corn. Sprinkle with sugar and black pepper. Cover and cook 10 minutes. Uncover and add tomatoes. Lower heat and simmer until it seems right.
