Hush Puppies GET IT RIGHT!! THERE’S ONLY ONE WAY AND THAT’S FRANK’S WAY!! Basic Recipe from Joy of Cooking with some modifications. 1 Cup stone ground Cornmeal 1 teaspoon double acting baking powder ½ teaspoon salt XX minced onion...although recipe calls for 2 to 3 tbsp minced onion, that’s not nearly enough 1 egg ½ cup milk Use one large onion, chopped and minced. If the onion is whizzed lightly, it mixes well, but adds a little too much liquid. Stiffen the mixture a little. Maybe let it set for a while. Take about 1 tbsp (rounded teaspoon?) and drop into hot oil. Result is about 1½ inch diameter and round. Don’t form these things into pones or any other Yankee variant...they should be light and fluffy. Recipe calls for 370ï‚°F but that seems to cook too fast for the size pup that I want. Try 350ï‚° or even 325ï‚°. Check the thermometer. ------------------------------------------------------------------------------------------------------------------ Similar Variant Recipe from “Hodgson Mill” (Bag of Cornmeal) 1 ¼ cup stone ground cornmeal ¼ cup white flour, unbleached 2 teaspoon sugar ¾ teaspoon baking powder ¼ teaspoon baking soda 1 teaspoon salt 1/3 cup chopped onion 1 egg ¼ cup water ½ cup buttermilk Mix dry ingredients well. Add onions, egg, water, and buttermilk. Stir until just moistened. Let dough stand 5 min to set. Drop rounded teaspoons into hot oil, 375ï‚° , and fry until dark golden brown. Turn once. Drain.
