This is one of those Trader Joe's recipes that they sample at the store. Easy to make with a few of their items and so so good. I love having a batch of this in the fridge all week for healty snacking. It's also yummy heated up in a tortilla.

salt & pepper to taste
1/3 cup coconut milk
2 cloves garlic pressed or minced
2 tbl coconut oil
1/2 a small onion (about 1/3 cup) diced fine
1 pkg tj's precooked lentils or 1.5 cups cooked lentils
1 bag tj's frozen mushroom medley or 1 lb. mixed mushrooms, chopped
Heat oil in a skillet, saute onions 5 min. Add garlic, cook 1 min. more.
Add mushrooms, lentils, thyme, wine & soy sauce. Cook for a couple min. to combine.
Add stock & kale, then coconut milk.
Season with salt & pepper.
Serve.
