  • 2 medium whole wheat tortillas cut into 8 triangles
  • 12 tablespoons chunky salsa
  • 12 links turkey breakfast sausages cooked and cut in half
  • 1 carton egg whites or egg beaters
  • 4 ounces cheese
  • garnish with
  • light sour cream

Cut tortillas into triangles and line muffin cups with two triangles a piece. Place cut turkey sausage in bottom of each muffin cup. Place one tablespoon of salsa into each muffin cup. Fill with egg beaters until at the top of the cup. Cover with shredded cheese and bake until eggs are set. About 1 hour in a 350 degree oven. Top with dollop of sour cream and fresh cilantro.
