Combine water, sugar, and yeast. Let rise for 10 minutes. In mixer with a dough hook, add salt and 3/4 of the flour. Keep adding the remaining flour, until the dough pulls away from the bowl. Place dough in lightly greased bowl, cover, and let rise for 45 minutes. Punch down dough and roll into rectangle onto floured or greased counter. Top with sauce, cheese, & pepperoni. Leave a 1/2 inch at end edge so the rolls will seal. Roll from the long edge, until dough forms a log. Cut into 12 slices using floss. Add to parchment lined baking pan and cover and let rise for another 30 minutes. Bake 350F for 25-30 minutes.
