This is how I always want to start my day. A cheats way is to cook loads of mince in advance and then just heat it up and throw everything together in a few minutes at breaky time

  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 avocado
  • 1 cup beef stock
  • toppings
  • salt & pepper to taste
  • 1 handful fresh coriander roughly chopped
  • 500 grams ground beef
  • 1 cloves garlic crushed

  • chilli finely chopped
  • 6 eggs cooked however you like em
  • 2 tomatoes cut into large chunks
  • 4 tablespoons greek yogurt (optional)

1. Heat oil in a frying pan to a medium heat 2. Brown the beef 3. Add cumin, garlic, salt, pepper & chilli and fry for 5 min 4. Add stock and tomato paste and simmer until reduced by half (6-7 min) 5. Add salt coriander and turn down heat 6. Cook your eggs however you like 7. Serve mince topped with the eggs, tomato, avocado, tomato and yogurt (optional)
