With high heat and impinged air technology, most vegetables cook to a crisp tender with great browning in 3 minutes or less. I like my baby broccoli slightly charred and finished with a prodigious amount of lemon.

Baby broccoli typically varies in the thickness of the stalk from piece to piece. If some of the pieces are too thick, slice them in half lengthwise. In a medium sized bowl, toss the broccoli with the olive oil, garlic, salt and pepper. Ovention setting: 1. 500 degrees / 100 top blower / 100 bottom blower / 2:00 After the the broccoli is cooked, transfer to a large bowl and toss with lemon juice. Garnish with lemon zest.
