  • 6 cups vegetable broth
  • 2 (15 ounce) cans chickpeas (garbanzo beans) drained and rinsed
  • 1 cup dry lentils picked over and rinsed
  • 1 large sweet potato cut into small cubes
  • 1 (15 ounce) can lite coconut milk
  • 2 tablespoons curry powder (i used mild curry)
