Want a healthy excuse to eat chocolate in the morning? This Chocolate Granola recipe is easy to make and tastes so indulgent you won't believe it's actually good for you! How can you go wrong with spoonfuls of chocolate clusters, full of rolled oats, coconut, and chopped nuts?

  • 1 tsp. vanilla extract
  • 1/2 cup sunflower seeds
  • 3 cups old fashioned oats
  • 3/4 tsp. salt
  • 1/4 cup coconut oil (melted)
  • 1 cup chopped nuts ((i used pecans and slivered almond
  • 1 1/3 cup flake coconut (divided)
  • 1/4 cup + 2 tbsp. brown sugar
  • 1/4 cup + 2 tbsp. pure maple syrup
  • 1 1/3 cup miniature chocolate chips (divided)

Line a large baking sheet with parchment paper and preheat oven to 325ºF.  Combine and stir together oats, 1 cup coconut, nuts, and sunflower seeds in a large bowl. Set aside. In a separate small bowl combine brown sugar, maple syrup, melted coconut oil, salt, and vanilla extract. Mix well. TIP: If mixture starts to harden as coconut oil cools, or isn’t mixing smoothly, microwave for 15 second intervals until smooth. Pour liquid ingredients over combined oat mixture. Stir to combine. Pour onto prepared baking sheet. Bake for 25 minutes, stirring and tossing granola halfway through. Remove from oven and immediately sprinkle 1 cup miniature chocolate chips over granola. Let chocolate sit on hot granola for a few minutes. Then, toss and stir directly in pan so granola becomes coated with chocolate. Cool granola completely then add 1/3 cup additional chips and 1/3 cup additional coconut.
