  • 1/4 teaspoon black pepper
  • 2 cloves garlic thinly sliced
  • 1 tbsp olive oil (can omit if using a fattier sausage)
  • 1 13- ounce package turkey or chicken sausage sliced, or removed from casing.( i also use moose sausage on occasion)
  • 1 19- ounce can white beans drained & rinsed
  • 1 14.5- ounce can low-sodium chicken broth or 2 cups chicken stock (
  • 1 14.5-ounce can low sodium or salt free diced tomat undrained
  • 1 bunch kale torn

Heat oil in a large pot or dutch oven (if using) over medium heat.Add the sausage and cook until browned.Add the garlic, cook a couple minutes (don't want it to burn). Add beans, broth, & tomatoes. Bring to a simmer.Meanwhile, chop kale (be sure to remove stem) and add to the pot. Just wilt it down for 2 to 3 minutes. Remove from heat. Season with pepper if needed and serve!
