First of all you have to heat a non-stick pan and add the olive oil. Chop the onion and cook it until it gets translucent . After that, add the potato cut in little cubes, half glass of water and cover the pan. When needed, add more water to prevent the potatoes from sticking or getting burnt. When the potatoes are soft, add the eggs and cover the pan until the egg white is completely cooked. Put everything on a plate. You can add salty cheese, parmesan or spring onion. Enjoy !
