  • 2-3 tablespoons unsweetened coconut flakes to top muffins

Preheat oven to 350 degrees Fahrenheit.Insert muffin liners in muffin pan, and spray coconut oil spray on each muffin liner. Set aside.Add all ingredients (except coconut flakes) in blender and blend on high until smooth.Carefully pour mixture into muffin liner (about ¾ full), and top with coconut oil flakes. Bake for 30 minutes. Let cool and enjoy!
