This is the lightest, fluffiest pancakes you ever ate.. The flavor is wonderful and frequently I eat them with a little butter.

  • 1/2 t baking powder
  • 1/2 c flour
  • 2 eggs separated
  • 2 t sugar
  • 1/2 t salt (reduce with salted butter)
  • 1 t melted butter

Separate eggs. Beat Egg whites until soft peaks are formed, gradually add 2 T sugar beat until Egg whites are stiff. Beater must be very clean. Then beat together remaining ingredients; egg yolks, remaining sugar, milk, flour, baking powder and melted butter. Fold Egg whites and egg yolk mixture together gently.
