Using a vegetable peeler, slice the carrots into long thin strips and put into a large bowl.Add the oil and spices and mix until coated.Put them onto a baking sheet in a single layer.Bake at 350 for 7 minutes, remove from the oven and flip them, and bake for another 7 minutes. Keep an eye on them in the second round to make sure they don't burn!Allow to cool and crisp a little before serving.
